Hi Everyone

Its been a while, am back with a pretty interesting dessert and yet another veggie dish which is more of the Goan Xhacuti twist. Read and have some fun in the kitchen as you prepare these dishes

Cauli mushroom Twist

half a cauliflower , only the top flower
a packet of mushroom
Two onions
Curry leaves a few
Olive oil - 1 tbsp
Salt as per taste
a Few fresh corriander leaves


For the Masala:
Coconut powder- half a cup
a small piece of ginger
5 garlic cloves
1 tbsp dry corriander seeds
Few pepper cons
3 red dried chillies
2 cardamons

In a frying pan, pour a little oil and fry the above ingredients till light brown. Using a little of water grind to to a fine paste

Method:
Make small flowerets of the cauliflower and boil till its cooked, not very soft ,not very hard. Keep aside.

Pour oil in a vessel, chop the onion and fry till light brown. Cut the mushroom into small pieces and add to the fried onion. Add the curry leaves.Cook for sometime. Now add the masala. Cook for 10 min. Add the boiled cauliflower. Salt as per taste. Cook for a while till the mixture is cooked well.Garnish with finely chopped corriander.

This is an ideal curry that can be eaten with plain cooked basmati rice. A simple and delicious meal. The masala is close to the Xhacuti masala hence making the flavours rich and tasty

Marie in a Hurry

Ingredients:
Marie Biscuits- 5 Nos
Orange cream biscuit- 5 biscuit
Cadbury fruit and nut chocolate- 2 Nos (the 25 Rs packet)


Method:
Using a double boiler, melt the cadbury fruit and nut chocolate. Crush the marie and orange cream biscuit into a coarse powder and add it to the melted chocolate. Stir well.

While still melted, make irregular small balls of this mixture and refrigerate it.

There you go, this simple dessert is ready to be eaten. The orange tang from the orange cream biscuits and the delicious nuts and chocolate flavour makes it simply yum !

Fun with your cupcake

A simple cupcake can come to so much of use to you to if you only knew is value. Here are a few way of having fun with your cup cake

Deck it up

A simple vaniila cupcake purchased from the market can look beautiful in the following ways:

Mellt chocolate, pour it in a cone made of butter paper , place nice brown dots on your cup cake using this melted chocolate or melt chocloate and cover the entire top of the cupcake with the chocolate, decorate it with small cherries pieces or small tutti fruity pieces.

another way of enjoying your cup cake is with simple jam, slice the cupcake into half, in the lower portion , apply strawberry jam, or orange marmalade. Place the other half of the cupcake and you have a different twist to it here ! Your kids will simply love it !

Cupcake Dessert
another way of enjoying your cup cake is, in your dessert bowl, place a small layer of strawberry icecream, slice your cupcake into small pieces and place it on top of the strawberry icecream, on top of the cupcake layer have a fine layer of your custard pudding. Freeze it for a while and serve chilled. You can decorate it with dry fruits such as small pieces of almond or pistachio pieces.

Chickoo Smoothie

What do you do with the home picked chickoo from your backgarden. The best way of enjoying this fruit is just slicing it into pieces and eating it just the way it is. The other way is to enjoy a smoothie of it.

1 chickoo
2 spoons of milk maid
1 cup of milk
ice cubes

Blend the chickoo, milk maid and milk into a thick syrup. Pour it in a cup, serve with ice cubes. Its refreshing, quick and just yum
Mama Mia its the sweet potato !

Ever wonder what can be done with the delicious sweet potatoes sold along the Agassaim Roads. Firstly my advice to all my readers, stop your car, get off into the field join the farmer in extracting this beautiful god creation from the soil , its an amazing feel ! Then try out these simple sweet potato recipes

Deep Fried Sweet Potatos

1 Spoon finely ground sugar
4 sweet potatoes
Oil for deep frying.

Boil the sweet potatoes and remove them when half cooked. Peel the skin, chop them into thin long slices. Heat the oil, and deep fry them. Serve them over a hot cup of chai . Sprinkle a little castor sugar on these potato chips. Its simple and delicious

Sweet potato pancakes
4 Sweet potatoe
Amul butter
Orange or Lemon Marmalade/Honey

Boil the sweet potatoes, skin and mash them. Ensure you get a smooth paste like consistency , remove all the thread and anything hard in it. Make small balls and roll into a small chappati. Heat amul butter in a frying pan, fry the sweet potato chappati till golden brown on both the sides. Spread a little orange marmalade on it or honey and serve hot. Its just melts in your mouth...

My Junk Salad

Have you anytime given a thought of combining junk food with healthy stuff. My junk salad is a mixture is all the crazy ingredients you would get in the market , making it entirely delicious.

Ingredients:
4 boiled potatos, chopped into pieces and deep fried
2 small packets of Bingo masala tangles
A small packet o f Haldiram moog dal
SIL mayonaise ( 2 spoons)
A small packet of haldiram salted groundnuts.
Salary leaves (2  nos finely chopped)
Few pieces of pineapple
A few boiled chick peas
Olive oil
Salt and pepper for taste

Mehtod:
Cut  pineapple into fine pieces, Smash chickepeas till it is coarsely powdered. Mix chickpeas with the potoat and pineapple pieces. Add the moog dal, fine pieces of salted groundnuts, finely chopped salary leaves, 2 spoons of mayonaise and coarsely powdered bingo masala tangles. Add a dash of olive oil, a little of salt and pepper for taste. Refrigerate and serve . Its your junk salad, with ingredients that are cheap and easily available , a mixture of health with a little bit of fun !

This can be done with simple boiled potatoes too... no hard and fast rules with your potatoes here....

A twist to Rabdi !

Bringing India and Pakistan together this sweet dish can be enjoyed in many ways. Here are some tips on enjoying your rabri.

Ingredients:
1 container of Rabri (In Goa, the best rabri can be purchased from Punjab and Sind Outlets)
A few jalebi
A few walnut, cashew nuts, pistachio and raisins (soaked)
Cherries for garnishing

Divide Rabri into 2 part.
In the first part, mix rabri with small pieces of jalebi. If you find your rabri too thick, add a little of sweetned milk to it. Refrigerate it. Serve to your guest nice and chilled.


To the other portion of Rabri, add fine pieces of walnut, cashewnut, pistachio and your soaked raisin. Mix well, and top it with few pieces of cherries. This needs to be served a little thick !. Marie Biscuit Salami ( Quick Dessert)

Having guest over for Xmas or dinner and really stuck on what dessert to serve. Try this quick recipe.

2 Packets of Marie Biscuit (Big packets)
A chocolate Slab
1 Fruit and Nut chocolate (Indians you would know what it is :), for those not from India, any chocolate of your choice having a mixture of nuts and raisins)
Vanillla icecream


Method: Make small pieces of marie biscuit and keep aside. Heat the chocolate slab, using a double boiler.

Once the chocolate is melted, add the fruit and nut slab. Wait till this mixes well with your chocolate. Slowly add the marie biscuit pieces, mix well.

Once done, arrange the entire mixture in the form of a long roll. Roll neatly and freeze for 10 min.Remove and cut into fine circular pieces

In your fruit bowl, place a scoop of  vanilla icecream, make small pieces of your salami and serve. Or Marie biscuit salami can be served just plain. Try making this and you will simply love it. Do mail me your feedback to friendlynads@gmail.com. would love to hear from you :)
